Looking for quality from our own country, we came across the North-Limburg butchery Edelbrons, owned by traditional butcher Joos Truijen. He strives towards capturing the mouth-watering flavour of real meat in his charcuterie and achieves this by using all his skills, giving his products the time they need (sometimes several years!) and working with a local pig-farmer who raises his animals with respect. Anyone who has tasted his products will understand what Truijen is getting at. In his wide range, his creamy white juniper bacon which easily stands up to the competition from the illustrious lardo di Collonata, is a particular highlight.
