Unfermented olives from Kalamata on the Greek mainland. The olives are dark-purple in colour and are pointed. The olives are ripened in sea salt, water, extra virgin olive oil and red wine vinegar. The addition of sea salt means these unfermented olives do not need to be refrigerated.
