Bocconcini literally translates from Italian as 'little bites'. This buffalo milk mozzarella, also known as ‘the queen of the spun cheese’, is famous for its refined, fresh taste. The mozzarella of Casa Madaio has a Denominazione d'Origine Protetta, a protected designation of origin, and the buffalo milk used to make it, comes from small farms located in the coastal area of the Parco Nazionale del Cilento near Salerno. The cheese looks like white porcelain on the outside and is soft, smooth and layered within. It smells like fresh milk, cream and flowers. The taste is somewhat grassy, with light salting and acidity.
