Goat’s cheese from Lichtaart in the Kempen, Antwerp. Farm Polle has a few goats and most of their milk is used to make this special goat’s cheese. The blinker is the newest member of their range and has a white mould crust similar to that of a Camembert. The cheese is lightly salted and the acidic taste typical of goat's cheese disappears during the ripening process.
