Mushrooms

Wild morels, or morels in a French style, are only available fresh for a few weeks of the year. Our dried morels come from the Himalayan mountains in Pakistan. During the drying process, they are smoked lightly to add power to the flavour. Porcini (Italian) or cêpes (French) cannot be cultivated. The fresh season runs from mid-August to October but, just like all mushroom varieties, varies with the weather.
