Capers: it's all in a bud

Capers are the closed flower buds of the caper plant, which are then salted or soaked in vinegar. The best varieties come from the island of Pantelleria (closer to Africa than Europe). Together with the floral elements of the flower, a caper from Pantelleria can serve as a refined seasoning to many meals. Ultimately, they are supplied in extra virgin olive oil or dried, however the freeze-dried variant is interesting as it readily takes up any flavours or sauces it sits in.
