The fresh summer truffle season begins in April and lasts until roughly the beginning of September. During this period we freeze and vacuum pack a selection of the harvested summer truffles to make them available for purchase throughout the year. During the deep freeze process the cell structure is broken down creating a truffle that is as dark on the inside as the outside. Because of this process the flavour of this gentle truffle is greatly enhanced.
