Contrary to popular belief, this is not a blue cheese. The blue layer in the middle is in fact the ash that is used to separate the evening from the morning curd in production. This cheese is made with raw cow's milk in Luxembourg, close to Marche. Eat it young and experience delicious, fresh, sour notes. As a more mature cheese it develops a fuller, stronger flavour.
