Lola Montez

This Austrian cheese is made using the pasteurized milk of the Brown Swiss variety of Alpine cow. The abundant flowers and herbs that grow in the mountains during the warmer months are gathered, dried and used to encase the cheese to accentuate it’s spicy, floral notes. It ripens for 7 months in total with the herbs and flowers added in the final month.
