Made entirely from roasted seeds, this is currently one of the few organic sesame oils produced in Japan. Henko teshibori goma abura is a unique oil obtained by hand-pressing organically grown sesame seeds after they have been roasted in a cast-iron pan. Only the first pressing, about 30 per cent of the potential oil yield, is used. The next day the oil is “washed” by forcing steam through it, and it is then allowed to rest for three weeks. During this time the heavier water settles at the bottom of the vat, taking any impurities with it. The oil is then heated and the last traces of water removed. Finally, the pure oil is passed through a filter of thick Japanese paper.
