Katsuobushi in whole pieces retains its flavour and lasts longer when stored away from light and moisture. After each use we advise you to pack it in plastic foil, vacuum pack it (for professionals) or store it in a tightly closed container in the refrigerator. We have found that smaller, katsuobushi chips lose their flavour and aroma faster, with the taste quickly becoming unpleasant due to rapid acidification. This means they have to be used within 8/10 days of manufacture. For superior preservation, the only solution is to store them in nitrogen. Packaging in large quantities (kg, for example) is therefore not advisable for these reasons. Keep in mind that only freshly grated katsuobushi reveals all its flavour.
