Burratina di vacca

A Burratina is a little Burrata. The Burratina is made from fresh cow's milk and the milk used comes from small farms located in the coastal area of the Parco Nazionale del Cilento, Basilicata close to Piana del Sele, Salerno. Burrata is mozzarella on the outside with pieces of mozzarella and fresh cream on the inside. The appearance is white and pearly and the Burrata has a strong smell of fresh milk. The heart has a bouquet of cream and butter. Only rennet and salt are added to the buffalo milk during production. After spinning and solidification, the Burrata is formed in a bag with buffalo cream and pieces of buffalo mozzarella within. Best served at room temperature! Serving straight after cooling would undermine the hints of hazelnut and straw typical of the flavour of buffalo milk. It is best to serve the Burratina ready-sliced, immersed in its own cream. Packing: In 1 box there are 4 trays each with 6 Burratina of 100 grams, so 2.4 kilos per box. Only salt and rennet are added to the buffalo milk. After spinning and coagulation, the cheese is shaped into a burrata in a pocket with buffalo cream and shreds of buffalo mozzarella. It must be served at room temperature! Serving this cheese straight from the fridge would greatly undermine the hints of hazelnut and straw, so characteristic of the buffalo cream… Ideally, the burrata is cut before being served in its own rich cream.
