Cumin Farmhouse Cheese from Leiden

This cheese is made from skimmed milk, rendering a cheese with 30% fat in solids. The skimmed off cream is used to make authentic unpasteurized butter; the low-fat milk to make cheese. In the early days, low-fat cheese was not a popular product and the lack of fat was therefore “camouflaged” by adding spices such as cumin. Today, this cheese is a classic. It is allowed to bear the special cheese mark with the two crossed keys (the symbol of the City of Leiden). Only fifteen farmers in the Green Heart of Holland produce this type of cheese. A traditional regional product, this cheese is made by farmer Nel and her daughter Trees.
