Palm Sugar is a golden paste, which can range in colour from light to dark brown. The sugar can be soft and sticky or hard. It is used to sweeten food to get the perfect balance when making, for example, salt fish. It can also be also used in sweets and desserts. Originally obtained from the sugary sap of the palm and the arengpalm, nowadays it's also extracted from the sap of the sago palm and coconut.
