Organic, raw milk, red mould cheese from the 't Dischhof cheese factory in Diksmuide, Belgium. Because it isn’t pasteurized, the rich flora of the milk remains intact and enriches the flavour of the cheese during ripening. Throughout this phase the cheese is frequently rotated and washed.
