This Palestinian za'atar is green in colour with a different kind of spiciness to the Lebanese version. A little olive oil is also added to the mix. It has the aroma of the warm Mediterranean hills of Palestine. Palestinian za'atar is delicious mixed with olive oil as a simple dip served with flat or fresh bread. It is classically served alongside breakfast, but delicious at any time of the day. We love it sprinkled over labne, on fried eggs, in a flatbread sandwich or over a fresh tomato and cucumber salad with sprigs of fresh mint.
