Freekeh is young, toasted and cracked green wheat. The result of this unique toasting process is an awesome, almost smoky flavoured grain. Freekeh is eaten regularly in the Middle East as an accompaniment to hot dishes such as (lamb) meat cooked with almonds, spices and served with yoghurt. But it’s a highly versatile grain and also works beautifully with raw or roasted vegetables, spices, fresh herbs, meat, fish, nuts- practically everything! We are a fan.
