The black winter truffle ‘Tuber Melanosporum’ is the most popular truffle amongst gourmets and can be found between November and the beginning of March. It is also known as the ‘Périgord truffle’, the ‘Norcia truffle’ or simply the ‘Melanosporum’. They are found in Umbria (Italy), in south-western and south-eastern France and in Spain (the corner between Madrid, Barcelona and Valencia). The winter truffle has an anthracite 'peridium' (shell) that appears 'coated' with small irregular bulges. The 'gleba' (flesh) inside is brown with white veins that have a transparent edge. This truffle emanates the most beautiful perfume.
