Frozen truffles: often a godsend

First and foremost: nothing beats fresh truffle! we know! However, sometimes your favourite truffle is not there because the winter truffle is only available in the winter and the summer truffle ... well, you understand. Frozen specimens then offer a welcome solution!
We already did, but please do this test yourself: taste let’s say a summer truffle, freeze it, defrost it and taste it again. There is a good chance that the taste of this truffle has improved. And that is nice in the month of April, when there is no truffle to find, or at other times of shortage. The structure does change, that’s true, but the flavour remains, which makes frozen truffles perfect for processing into something else. Try it!
