You could never tire of olives as a savoury accompaniment to a drink as there are so many different varieties: green, sometimes bright green, moss-coloured, deep purple, dark brown and jet blackish. There are tiny varieties and huge, both with and without a stone. We voyaged to the Mediterranean to find the best selection in terms of flavour and experience in the mouth, which is affected by the meatiness of the actual olive.
