Aged for 20 to 24 months, completely boneless. The Duroc breed, cousin of the Iberian pig, is a meat breed known for its fat quality. Pigs are brown-black and hairy with floppy ears. The pigs are raised on straw in our pigsty in Ainhice Mongelos (next to St Jean Pied de Port) and have access to the outdoors all year round. They are fed with noble grains from the region (corn, wheat, barley, sorghum) to get tasty meat.
