Chanponzu

There are two types of ponzu, although the basic production process is identical for both. They are made from four types of citrus fruit, combined in a such a way that four of the basic tastes are emphasised: sour, salty, sweet and bitter. To correct the salt balance, sea salt is added to make white ponzu and soya sauce to make black ponzu. The flavour of white ponzu is said to closely resemble umami, the fifth basic taste.
