Most mirin is maize-based, but this product is made from rice. Two varieties are available, matured for either three or ten years. The former is matured in cherry wood, the latter in pine. The results of the maturation process are comparable with that for balsamic vinegar. Mirin is used mainly in desserts and sauces, or as a carameliser.
