The Casa Madaio mozzarella has a ‘Denominazione d’Origine Protetta’, a protected name of origin, and the buffalo milk used for its production comes from small farms in the coastal area of the Parco Nazionale del Cilento near Salerno, Italy. The outside of the cheese resembles white porcelain. Inside it’s a soft, smooth, layered cheese that smells of fresh milk, cream and flowers. It has a soft grassy flavour, with light acidity and a touch of salt.
