The only cheese originating from an independent corporation and which is ranked as the top of Dutch pasteurized cheeses. The cheese is almost 3 years old and so mature that it almost crumbles. It has a dark colour and an intense and powerful flavour. Contrary to what is commonly thought, the crystals in the cheese are not salt crystals – they are calcifications. Milk calcifies after one year of ripening.
