Carnaroli superfino rice makes a perfect risotto. A very rich and delicate rice variety, Carnaroli grains have good absorbing quality yet retain their firmness due to the fact that they shed a low amount of starch. A short grain rice with excellent cooking properties, it absorbs liquids evenly and is less creamy than the Vialone Nano. Carnaroli is best used when cooking with creamy ingredients.
