Dukkah

Dukkah was originally an Egyptian spice, nut and roasted chickpea mixture. 'Dukh' means to stamp! Which makes sense because this special powder is made through the crushing process. Our homemade dukkah features an array of spices from cumin to star anise, coriander and ginger, but also sesame and poppy seeds, almonds and roasted chickpeas to achieve that typically powdery yet coarse dukkah structure. It’s delicious with oil and sprinkled for example on labé (drained savoury yogurt from the Middle East). Dukkah is also great with salads, over fried, roasted or raw vegetables, with eggs or as a garnish for avocado on toast. Traditionally, dukkah is eaten over koshari: Egyptian street food that combines rice, pasta, lentils, chickpeas and fried onions.
