This mozzarella made from buffalo milk – also called the king of spun cheese - is famous for its fine, fresh flavour. The Casa Madaio mozzarella has a Denominazione d’Origine Protetta, a protected name of origin, and the buffalo milk used for its production comes from small farms in the coastal area of the Parco Nazionale del Cilento near Salerno. The outside of the cheese resembles white porcelain. It is a soft, smooth, layered cheese that smells of fresh milk, cream and flowers. It has a soft grassy flavour, with light acids and a bit of salt. The mozzarella is available in balls of 250, 125, 500 or 700 grams, and in ‘bocconcini’ of 50 grams. They also come as Ciliegine (cherries) of 25-30 grams, Nodini (buttons) of 30 grams, Treccine (‘twists’) of 250 grams and Treccione (‘braids’) of 2 kilograms. The mozzarella also comes smoked following a traditional process.
